We've put together some of our favorite peach recipes to share with you. Enjoy....

TOMMIE'S PEACH ICE CREAM
(Brant's oldest sister)

4 eggs
½ cup honey
1 ½ cup total milk and cream
1/8 tsp. Salt
1 cup milk
1 Tbsp. Vanilla
¾ cup yogurt
4-5 peaches, peeled and chopped
additional milk

Mix eggs, honey, 1 ½ cups milk, and salt. Cook over medium heat until mixture steams (do not simmer or boil). Remove from heat. Cool while fixing peaches. Add 1 cup cold milk to cool more. Stir in vanilla, yogurt, peaches, and more honey if desired. Pour into ice cream freezer and add milk


CAROL'S PEACH PAVLOVA

This is an elegant-looking but light-tasting adaptation of a dessert served to us in New Zealand by our friend Karen Murray. It consists of two layers of meringue put together and frosted with whipped cream and garnished with sliced peaches (the original used kiwi fruit).

4 egg whites
4 tsp. cold water
1½ cups sugar
1 tsp. white vinegar
1 tsp. vanilla
peeled and sliced peaches, mixed with a little sugar if desired
whipped cream

Beat egg whites and water until light and fluffy. Very gradually add the sugar, beating all the time. When well mixed add vinegar and vanilla. Beat until very stiff. Spread into two 9" circles on wet waxed paper and place in 375º preheated oven. Turn off oven immediately and leave 40 minutes or until crisp.

To Assemble: Place one meringue on serving plate. Spread top with whipped cream and layer with peaches. Add second meringue and repeat process. Serve immediately.


GRANDMA BESSIE'S QUICK PEACH COBBLER
(Carol's Grandma)


This was one of my grandma's favorite recipes. It came off a flour sack many years ago.


¼ cup butter, softened
½ cup sugar
2 tsp. baking powder
1 cup flour
½ tsp. salt
½ cup milk
3-4 cups peeled, sliced peaches-fresh, frozen, or canned

Mix all ingredients except peaches. Spread in bottom of a greased 9x13 cake pan. Spread peaches on top. Pour over top 1 cup of peach juice or water and ¼ to ½ cup additional sugar. Bake at 375 º for 45-50 minutes. Serve with cream.


ROBYN'S PEACHES AND CREAM PIE
(Brant's 2nd to oldest sister--she's says it came out of the Colorado Cache cookbook)

¾ cup sugar
¼ cup flour
¾ cup cream
¼ tsp. salt
8 peaches, peeled and sliced
salt
lemon juice
9 " baked pie shell
butter
cinnamon

Mix together sugar, flour, cream, and salt. Sprinkle peaches with salt and lemon juice and place in pie shell. Pour mixture over peaches. Dot with butter and sprinkle with cinnamon. Bake at 425º for 15 minutes; then 300 degrees for 40-45 minutes.
